That sounds pretty outstanding actually, though I don't think I ate a century egg until my late teens (and would probably need the tofu to temper the flavor a bit, the way I do with jook.) That kind of crossover is becoming more common though, particularly with someone like David Chang. His salad caprese at Momofuku sounds like the gateway between those two:
