It was a combination I'd never seen before: spätzle and emmenthaler cheese, topped with fried onions. Sort of a southern German version of Mac and cheese.

It was good and filling, though it probably would have been better as a side dish than as the main course.

That's very Swiss-Deutscher. I love me spatzle with emmenthaler. It works well traditionally with Swiss dried beef as a side.

Yah, we're close enough to Switzerland that a lot of food here is also Swiss, or vice-versa.

(I've always thought of spätzle as Swiss, myself, but the folks here claim it for their own, too.)

I always used to annoy my German instructor, who was from Stutgart, by saying, in a very broad southern accent, "Ich bin von sud Deutschland. Y'all."

It drove him nuts. :)

But that sounds like southern German cooking. And likely nice and tasty.
