The accents are probably horrid, but I doubt they were supposed to be speaking Chinese any more than Arnold was speaking Spanish when he said "hasta la vista, baby." The little bits of Chinese dialogue just seemed like the writers way of letting you know that China had become a larger part of the cultural landscape in the future and bits of the idiom had been absorbed into the language. Kind of like those folks who really like faahgeetas. :)

This is a much better argument than the one I've heard: that the language drifted in 500 years and that's the accent that exists then.

Another recommendation that you should watch the series. It is marvelous! It is one of those stories that pulls you in and makes you care about the characters and what will come next and takes you to neat new planets...and...uh...I really liked it. :)

Yes, it's an excellent series that was humorous and dramatic and touching and just generally what television should be, which is why it was cancelled.

The House of Chaos also has the DVDs and its residents could probably be convinced to watch them with you. :)

One bit of the making of portions of the DVDs explains the Chinese thing fairly well. I also highly recommend watching the making of portions, too. Very interesting, and also they show just how together and familial the cast was. The fact that they care so much about the show that they're doing really shows, and it comes through in the shows themselves, as well.
